This “Chunky Tomatillo Pico” is quick and easy to make, and adds a punch of flavor to your food! Tonight’s “ Pico” is to dress up our Rottisere Chicken, either on the side or inside a corn tortilla!  Pico typically has tomatoes, however I like to switch things up!

As with any of my recipes, I don’t ever measure when I cook; so I’ll try to guesstimate the ingredients for you! Remember less is more! You can always add in… but it’s hard to take out! So whenever possible taste as you go! Also you can adjust recipe to your liking; take out or add in…



• 2 good size tomatillos

• 1/2 a red onion

• 1/2 a sweet white onion

• few sprigs of cilantro ( or dried works, but fresh is best)

•few sprigs of oregano ( or dried works, but fresh is best)

• 1 Jalapeño

• 3 limes

• 1 tsp salt

•1 tsp garlic

• 1/4 cup apple cider vinegar

Serves roughly 5



•Chop up your white onion in long pieces.

•Chop your red onion in small pieces.

•Chop your Tomatillo.

•Slice your jalapeño in half and devein( get rid of the seeds). Then chop in pieces.

•Chop a few sprigs of Cilantro.

•Chop a few sprigs of Oregnao.

•Cut your limes, and all the juice.

•Pour your vinegar

• Mix all the ingredients above, then add in your salt and garlic. Let it sit for about at least an hour before eating, so the onions can soak up the flavors and lesson their “ oniony” flavor.
